Paleo Almond Butter Zucchini Brownies

Ingredients
  

  • 1 cup almond butter
  • 2 cups grated zuchinni 2 small or 1 large
  • 1/3 cup raw honey
  • 1 large egg
  • 1 cup cacao powder
  • 1 tsp baking soda
  • 1/2 tsp vanilla
  • 1 cup dairy-free chocolate chips (I use MadeGood brand)
Chocolate Glaze
  • 1/4 cup coconut oil melted
  • 2 tbsps raw honey
  • 2 tbsps cacao powder
  • 1/3 cup chopped walnuts optional topping

Method
 

  1. Preheat your oven to 350 degrees and line a 9x9 pan with parchment paper or grease.
  2. In standing mixer or large bowl with a hand mixer, combine all ingredients until completely incorporated.
  3. Spread your batter in your lined (or greased) pan. Bake for 30 minutes or until a toothpick comes out clean. 
Chocolate Glaze
  1. While your brownies are cooling, melt your coconut oil in a small pot on the stove.
  2. Whisk in the raw honey and chocolate until well combined.
  3. Spread mixture over brownies and let harden before serving. Top with chopped walnuts (optional)
